My favourite recipe using goat’s cheese

My life in Italy revolves around food and wine – and cooking is what brings my family together. I like to cook because I love to eat. Cooking at home means I get to eat what I love, how I love it and when I want it. No restaurant in the world can accomplish that feat – especially not for the price.

As a family, we plan holiday meals and snacks around fresh, seasonal, local Italian produce and we go to small local butchers and farmers to get it.

I’ve learned to cook by searching out tips from neighbours, and I read a lot of Italian cookbooks. In this region of Italy, Piemonte, the way of cooking is very rough and simple. Even a guy like me, who is not a part-time chef, can handle it.

If you have tried to make my pizza and risotto recipes from my previous blogs, you’ll know what I mean – they’re so easy to do. And this goat’s cheese recipe is the simplest of them all, and perhaps the tastiest. Try it yourself and you can be the judge!

Goat’s Cheese with Red Onion and Parsley

This is my favourite dish to make and says a lot about me as a cook. It’s simple – filled with only fresh uncomplicated ingredients. Make it four hours before you invite your guests and take out of the refrigerator one hour before you serve. Here’s how I do it.

Ingredients
Goat’s cheese (our local goat’s cheese is amazing!)
Ground pepper
Olive oil
1 red onion
1 bundle of parsley

Method
1. Cover the cheese with ground pepper and olive oil.
2. Chop red onion and parsley and place over cheese.
3. Leave to stand.

It’s that easy. Enjoy!
